The mallet has two working surfaces - a rough one for breaking up muscle fibers and softening meat and a smooth one for finer finishing and leveling the surface. Do not expose to prolonged soaking or washing in the dishwasher to prevent the wood from cracking. For a longer lifespan, we recommend occasional treatment exclusively with food grade mineral oil (commonly used on wooden kitchen utensils) or natural oil suitable for contact with food (e.g. linseed, tung or coconut). These oils are harmless to health, do not soak into food and prevent the wood from drying out and cracking. Apply the oil with a clean cloth and let it soak in, then wipe off the excess. Tips and recommendations Use the rough surface to soften tougher cuts of meat. The smooth surface is ideal for leveling and final finishing.
